How to Make Creamy Tropical Ice Cream with Coconut Milk

As temperatures soar across the UK and around the world, our priorities include staying as cool and refreshed as possible. Staying in the shade, drinking lots of water and avoiding the hottest part of the day are very sensible precautions to take.

However, adding deliciously tropical ice cream to the list of essentials adds some fun to the task of keeping cool.

One of the most popular ice cream flavours is coconut. Here’s a recipe for creamy tropical ice cream with coconut milk for you to try:

Ingredients

  • 50g coconut flakes
  • 2 x 400ml tins coconut milk
  • 2 tablespoons coconut milk powder
  • 30g golden syrup
  • 90g white sugar
  • Pinch of salt
  • 1-2 teaspoons vanilla extract
  • 1 tablespoon Caribbean rum

How to Make it

Step 1. 

Toast the coconut flakes in a dry frying pan until golden. Tip into a bowl and add coconut milk. Stir and allow to infuse for several hours.

Step 2. 

Place coconut milk powder in a saucepan and strain the coconut milk mixture into it, stirring well. Set flakes aside.

Step 3. 

Add syrup, sugar and salt and bring mixture to a simmer.

Step 4. 

Blend for two minutes and then add vanilla extract and rum.

Step 5. 

Leave to cool, chilling for several hours until really cold.

Step 6. 

Blend for another 30 seconds and then put into ice cream maker or container suitable for freezing.

Step 7. 

Serve when frozen in a bowl on its own or as an accompaniment to fruit salad or other desserts.
