| These crackers were first produced in Kingston, Jamaica in 1911. They were made using wood-burning brick ovens which created their particular taste and texture. In the old days the crackers, once baked, were sorted and packed by hand into wooden barrels. The manufacturing process of baking in the old style wood-burning ovens continues today and the fat-free crackers remain a popular and uniquely Jamaican product. Excelsior Water Crackers are eaten with cheese, fish, Solomon Gundy or on their own as a snack.
