Plantains resemble bananas, but are longer and have thicker skins. They need to be cooked before eating. When not ripe they are green in colour. When left at room temperature for a week they become yellow in colour, and sweeter in taste. In Africa and the Caribbean, they are boiled, fried or roasted.
